Books, Films, Or A Mix Of Both?

I'm not sure if this is answered anywhere or not, but I'm curious as to whether HNZ is 'running on from' the books or the films, or a mix of both (this is the one that seems to fit better with what I've read over the past couple of years).
This was brought up due to a question I had about whether or not we include the existence of the nameless wizarding school in Brazil (which, I believe, is mentioned in one of the books but not the films) and if we are going more from the films, does this mean things such as 'Ghoul Studies' and various other such places seen on the Marauder's Map will exist, too?
I'm aware that things will have changed with time and location, this being Hogwarts New Zealand rather than Scotland, but to save further confusion and vital space in my tiny head, I just wanted to get this cleared up.

I apologise if this has already been answered, or if my question makes little sense.

Short answer: The books are the ultimate canon. ;)
Long answer: There are times when the movies or the video games say something, or do something, which is later contradicted by JKR in written form, or in an interview, or whatever. This is shown in the effects of many spells in the video games.So we accept some things from the movies, but if JKR ever indicates that they're wrong, then she's right. :r For example when/if that Harry Potter encyclopedia comes out, it will be a great source for things - considered less than the books themselves but much higher than the movies (and certainly the video games).

Anything the books says is absolutely true. There are definitely other wizarding schools throughout the world that just don't get named.
Some things the movies say might be true, might be ignored entirely.

When in doubt: believe the novels.

I had heard a rumor about the encyclopedia coming out in the next few of years. That'll be extremely useful.
